GROWING METHODS FROM GROUND TO WINERY

PRODUCTION GUIDELINES

Growing methods, harvesting and all involved actions are defined by official guidelines. Every wine producer’s decision is greatly affected by the ground.

All our members manage their lands with great professionalism, taking advantage of agronomists’ precious advice, when necessary.

The winery keeps all members continuously informed and updated on the new rules and production guidelines. Every year, before harvesting, specific information is given on grape harvest time and on involved procedure.

HARVEST

The traditional vineyards grown with Bellussi and semi-Bellussi systems, harvested by hand, have been replaced by new technological espalier and GDC systems. Pruning and harvesting are now carried out by specific advanced machines.

This choice results from the need to reduce costs. In our winery, 70% of harvesting is carried out mechanically.

GRAPE QUALITY CHECKS

When grape is delivered to the winery, it is subjected to 5 evaluation parameters: weight, variety, sugar degree, healthy look (it must not be mold and rot), cleaning (presence of leaves and branches).

The quality of a good wine begins in the countryside: in every production phase the vineyards must be grown meticulously.

A rigorous transformation from grapes into wine takes place in the winery, till to packaging operations. Should one of these steps not be respected, then is complete work compromised. Let’s talk about price. The winery Santa Croce does not consider the price as the key selling point. It is fundamental to produce a great wine that reflects its terroir.
