Lambrusco wines and other sparkling wines can be bottled at any time
of the year, but the best period is during the first months between the
end of winter and the beginning of spring. These are wines that should
be consumed year by year. They age slowly, at the same rate as natural
fermentation, which takes place in the bottle, and are at their best after
having aged for three or four months.
Since a feature of Lambrusco wines is that they referment in the bottle,
it is important to ensure that this takes place slowly. In spring, the
ambient temperature steadily rises. This encourages the fermentation
process and brings out the more evident characteristics of the wine, i.e.
aroma and fragrance.

CHOICE OF THE BOTTLES:
use bottles able to withstand a pressure of 3 or 4 atmospheres for dry
wines and 8-9 atmospheres for semi-dry, semi-sweet and sweet wines.

HOW TO PREPARE THE BOTTLES:
the bottles must be perfectly clean.

BOTTLING:
The wine must be bottled within a few days of purchase, otherwise it will begin to referment in the demijohn, Wines that ferment naturally create a pressure increase in the bottle. To prevent the bottle from breaking, it is advisable to leave about 7 cm of empty space between the wine and cork for dry wines and at least 8 cm for sweet and semi-sweet wines.

CORKING:
different types of cork can be chosen but for this type of wine, the most important thing is to ensure that the cork achieves a perfect seal.

BOTTLE STORAGE and FERMENTATION PROCESS:
the bottles should be kept in a cool, dark place. The refermentation process that takes place in the bottle produces a slight sediment at the bottom. This guarantees that the wine is the type that ferments naturally in the bottle, a characteristic of all sparkling wines bottled from the demijohn in the traditional way.

SERVING:
serve the wine fresh from the wine cellar. The slight sediment at the bottom of the bottle requires a delicate touch when serving. Better still, decant the wine into a carafe.
